Het voelde als een flashback. Vorige week. Maar vandaag is dat vergeten. De sigaretten ook vergeten. Alles vergeten. Soms tuit ik buiten even kort de lippen om virtueel te inhaleren. Spontaan. Zuigfluiten. Maar dan anders. Dat lucht even op. Die voelbaar koele luchtstroom. Buiten.\u00a0<br><br>Hoe dan ook, hierbinnen, bij die super, is vandaag cochon en promotion. Een complete varkenspoot voor vierentwintig euro. \u00c9paule. Voorpoot dus. Een achterpoot voor een tientje meer. Dat is heel normaal bij de super hier: grote stukken beest in de koeling. Meedogenloos uitgestald. Halve varkenskoppen ook; messcherp overlangs gekliefd. Cirkelzaag denk ik. Ik probeer me de geur ervan voor te stellen. Maar er komt niks. Geen flits. Alles ruikt onbestemd ver weg.<br><br><br>Ik laat de poten links liggen en ga voor een stuk van de ribbenkast. Poitrine. Speklap aan het bot zeg maar. Een jambon gerookt in eigen schoorsteen komt een andere keer wel. Wat moet ik er ook mee? Zo&#8217;n mega stuk. De portie poitrine mag er trouwens ook best zijn. Eenmaal uitgebeend zeker goed voor een dag of twee pulled pork. Ook voor op stokbrood. Het restant kan in de nasi. Overmorgen. In Nederland.<br><br><br>De ribben liggen inmiddels bij de poubelles. In de grijze kliko. Het vlees nagarend in de oven. Ketjap. Harissa. Kerrie. Paprikapoeder. Peperkorrels. Komijn. Zout. Knoflook. En Piment d&#8217;Espelette natuurlijk. Uit Frans Baskenland. Een half uurtje nog. Touwtjesvlees. Met rijst. Wijn vergeten. Gelukkig heb ik wel tandenstokers. Boven.
